Thai Iced Tea

All you need for this treat is a big cellophane sack of Thai tea powder. Make it in a coffee maker or tea pot if you like, brewing it nice and strong.

  • 4 1/2 cups water

  • 3/4 cup Thai tea powder

  • 1/4 cup sugar

  • Ice, crushed or cubes, to fill each tall glass

  • 1 to  1 1/2 cups evaporated milk, or half and half

In a medium saucepan over medium heat, bring water to a rolling boil, stir in Thai tea powder, and remove from heat. Add sugar and stir well. Let cool, stirring occasionally to dissolve the sugar

When the tea has cooled to room temperature, strain it through a fine-mesh strainer, or a coffee filter, into a pitcher and chill until serving time. To serve, fill 4 to 6 tall glasses with ice, and then add about 3/4 cup Thai tea to each glass. Top off each glass with 3 to 4 tablespoons evaporated milk or half and half.. Serve at once, as the milk cascades over the ice and swirls languidly into the tea…
